Most of us want to serve good, healthy breakfasts, but time constraints often prevent us from doing so. The Healthy Breakfast Cookbook: Easy, Balanced Recipes for Busy Mornings by Shayna Telesmanic is a great primer for those who are in a hurry in the morning. The cookbook includes plenty of recipes for smoothies and other breakfast-type drinks which are a big thing nowadays. It also includes recipes for cereals, grains, and granolas, including some of the trendy grains like chia seeds, as well as some excellent egg dishes. The recipes featured are quite varied, and they have nuances from all over the world, from the popular Shakshuka (this one is “beefed-up”) to yummy Breakfast Enchiladas full of chicken, sour cream, and green chiles. There are sandwiches, waffles, biscuits, and scones, all made a little healthier with the addition of whole wheat flour and minimal sugar. Avocados are used in a lot of the dishes, and luckily all of the recipes are not plant-based; there are plenty of recipes using bacon, chicken, etc.

One of the best parts of this cookbook is that most of the recipes are fairly quick. They are also written in such a way that they are easy-to-follow, both for beginning cooks and for more experienced cooks. The recipes are good enough that people will actually want to make them. Anyone who is busy will appreciate that most of the recipes are quick, and there are also some that can be made ahead.

Two favorite dishes are Brussels Sprouts and Crispy Bacon One-Pan Hash and Sweet Potato Hash – they are both delicious. Every recipe so far has worked out picture perfect. Unfortunately, there aren’t very many pictures to let us know the results are perfect, and that is the only real drawback to this cookbook. In these modern days, there should be no excuse to scrimp on photographs.

All told, this cookbook is worth adding to any cookbook collection.
